Rare, medium, or well done

How you like your meat done is mostly a matter of personal taste. But
where you grow up can have a lot to do with the kind of meat you like
best.

The United States and Argentina raise a lot of cattle. So the people eat
large amounts of beef. China raises more hogs than any other country. So
the Chinese eat lots of pork. New Zealand raises a great many sheep.
And, not surprisingly, New Zealanders like lamb.

What you believe has a great deal to do with the kind of meat you
eat—or even if you eat meat at all. In Pakistan, most of the people
are Muslims. Like Orthodox Jews, Muslims do not eat pork. But they do
enjoy kabobs—bits of lamb roasted on a stick with slices of tomato,
pepper, and onion.

Spanish butcher shops sell mostly goat, pork, lamb, rabbit, and chicken.

United States

Barbecues are popular on Texas ranches. Beef and other meats are roasted
over an open fire.
